Tomato, Peach, and Burrata Salad

I'll be making this salad on repeat all summer long. Sweet peaches, juicy cherry tomatoes, creamy burrata and a fresh herb vinaigrette that brings it all together.


It looks like something you would order at a restaurant, but it comes together in about 10 minutes with minimal effort.


It is the kind of dish that works as a side at a summer dinner, a light lunch paired with grilled chicken, and I even had the leftovers alongside my morning eggs, and it did not disappoint.

The Recipe: Tomato, Peach, and Burrata Salad


Vinaigrette

  • ½ cup extra virgin olive oil

  • ¼ cup balsamic vinegar

  • 1 tablespoon honey

  • 1 tablespoon fresh lemon juice

  • ¼ cup chopped fresh basil

  • 1 tablespoon dill

  • 1 tablespoon thyme

  • Red pepper flakes

  • Salt and black pepper to taste


Salad

  • 1.5 to 2 cups cherry tomatoes, halved if large

  • 2 to 3 peaches, sliced into wedges

  • 8 ounces burrata cheese, at room temperature


Directions

  1. Combine all vinaigrette ingredients in a glass jar and whisk until smooth.

  2. In a large bowl, toss the tomatoes, peaches and dressing.

  3. Break the burrata over the top.

  4. Serve with grilled or toasted bread on the side.
