Tomato, Peach, and Burrata Salad

I'll be making this salad on repeat all summer long. Sweet peaches, juicy cherry tomatoes, creamy burrata and a fresh herb vinaigrette that brings it all together.
It looks like something you would order at a restaurant, but it comes together in about 10 minutes with minimal effort.
It is the kind of dish that works as a side at a summer dinner, a light lunch paired with grilled chicken, and I even had the leftovers alongside my morning eggs, and it did not disappoint.

The Recipe: Tomato, Peach, and Burrata Salad
Vinaigrette
½ cup extra virgin olive oil
¼ cup balsamic vinegar
1 tablespoon honey
1 tablespoon fresh lemon juice
¼ cup chopped fresh basil
1 tablespoon dill
1 tablespoon thyme
Red pepper flakes
Salt and black pepper to taste
Salad
1.5 to 2 cups cherry tomatoes, halved if large
2 to 3 peaches, sliced into wedges
8 ounces burrata cheese, at room temperature
Directions
Combine all vinaigrette ingredients in a glass jar and whisk until smooth.
In a large bowl, toss the tomatoes, peaches and dressing.
Break the burrata over the top.
Serve with grilled or toasted bread on the side.
